Crustless Quiche

I love weekend mornings.  I love weekday mornings when my husband doesn’t have to work even more.  Instead of the hurried bowl of cereal I can make something special for breakfast. Today it was spinach, mushroom and ham crustless quiche (ah the gluten free life).  I didn’t use a recipe, but here is what I did:

Sautee 1 small red onion (I used both olive oil and butter) until soft, add mushrooms (I used 4), 1 package frozen spinach, add salt and pepper to taste.  In a bowl mix 4 eggs and 1/2 cup (or more) egg whites, add 2 cups (or more) shredded cheddar cheese (or whatever you have on hand) and add the sautéed veggies to it.  Add ham if desired. Pour into greased baking dish (or muffin tins!) and stick into a 350 degree oven for 30 minutes.

    I looked at this blog for reference when I made a similar dish this past weekend. I used bell pepper, asparagus and bacon. Nom nom nom!
